Cinnamon Infused Chicken

6 chicken thigh, bone in, skin on
1 teaspoon salt
2 teaspoon cinnamon
6 cinnamon sticks
1 tablespoon olive oil
1 Tablespoon unsalted butter


Preheat oven to 350 degrees. Remove the chicken from the refrigerator and blot on paper towels to remove all of the excess moisture. (be sure to practice good technique to eliminate cross contamination). Mix the salt and cinnamon, dust on the chicken.

Heat a saute pan which is just large enough to hold the chicken pieces. Melt the butter in the oil and add the cinnamon sticks.

Place the chicken skin side down. Sear until browned, while they are searing tip the pan and use the cinnamon infused oil to baste them until they are golden.

Place in oven until cooked through; this should take about 30 minutes (170 degrees internal temperature). Remove from the oven and let rest.
